Instant Pot Cheesy Asparagus Wrapped In Bacon



I am always looking for recipes that I can quickly cook in our Instant Pot and that fit into our Keto lifestyle. I am excited about this recipe I found in the 101 Instant Pot Beginner's Recipe Ebook. We love our Instant Pot. . . it is a gadget that has been used and used in our house! So when I found this recipe, I had to share . . . enjoy!!!

  1. Instructions . . . directly from the Ebook I mentioned above
    1. Place 160ml of water into the bottom of your Instant Pot and you can measure it out with the cup provided.
    2. Chop the bottom end off the asparagus. Smother it with soft cheese and then wrap it in bacon. When done place them all on the steamer rack.
    3. Place the lid on your Instant Pot and set the valve to sealing and press steam for 3 minutes.
    4. Once it has started it will beep and it will beep 6 times when done. Once it has cooled down from keep warm mode you can get it out.
    5. Serve.

 I still use the scales, but I do not use them to dictate my success. I also measure and have a piece of clothing that I eventually want to fit in to. Just keep in mind that the benefits of feeling better far outweigh the number on the scales! The scales will begin dropping when your fat cells figure out you are not giving up and living a new lifestyle. . . the Keto Lifestyle!

The Success Manual. . .

You are made for SUCCESS . . . be intentional, strategic, and disciplined because you are WORTHY to LIVE ABUNDANTLY. . . 

Have you ever bought something that did not work quite the way you thought it would? My cell phone is an example of having so many great features that I did not known about. The battery would run out quickly during the day. . .until one of my teenagers showed me a way to put apps in the background and closed out so many items that were open draining my battery. Wow . . . I had suffered for so long trying to plug my phone in or completely running out of battery when I really needed my phone. My boys have shown me how to Google features of my phone. . . basically they showed me the manual to my cell phone. I also needed the manufacturer's update for it to work faster and better. It's amazing how helpful my phone has been since I have learned about the product, and I have been optimizing its efficiency! 

When you buy a product do you read the manual for it to work at its optimal level . . . or do you try to figure it out on your own like I was doing with my cell phone? 

When I tried to do it on my own, I missed so many features of the product that was there the whole time.

This is pretty much what I did with myself for many years. . . I had so many abilities, gifts, and strengths that I did not even know about until I "didn't work" like I should. . . my "battery" was draining so fast! I was broken and weak. . . I needed the "manufacturer" to "update" and fix me! 

When I lost my father-in-law, mom, and brother within a three year time period, lost a job, and then the diagnosis of breast cancer . . . my battery was worn. . .I was broken. . . I needed updating by my Maker. . . I could not do it on my own anymore! I was not created for this exhausting life. I was made to live abundantly. . . but how? I had to get intentional, strategic, and disciplined to optimize my efficiency. . . but first I had to read my "manual", the Bible! I learned so much about myself and my Maker. . . I learned that He had Graced me and that I was Worthy of the life He has for me. . . I had features available that I had no clue how to access! 

What were you created to do? Have you read your manual, the Bible, to know how to optimize your body? #worthy2019

What ever you were created to do . . . God will Grace you with what you need for the journey! Our maker put more in you than you realize . . . go find out how to optimize the abilities and strengths He gave you! 

Success does not happen overnight. You have to be:
  1. Intentional - you have to wake up and decide you are going to read "the manual" and study it! Be intentional of whatever it takes to get you prepared for the journey. Learn how to optimize yourself to be efficient! 
  2. Strategic - you have to have a plan to stay the course of being intentional. Think of the obstacles that will get in your way. . . we are not immune to trouble just because we are trying to stay the course. It is pretty much guaranteed that something or someone will try to stop us from living abundantly. . . As seen in John 10:10, the enemy has come to steal, kill, and destroy. . . But we have Jesus that has already won that battle for us, "I came that they may have life, and have it abundantly". Stay in God's Word because it is living and will guide you along the path. . . it is your "manual" for the journey! You are Graced to live abundantly when you are living in Jesus' Name! 
  3. Disciplined - Be disciplined in the journey. It will take a while to make this intentional and strategic lifestyle a habit. While the enemy tries to put temptation in your way, be disciplined to stay intentional and follow your strategic plan. . . stay "updated"! God made you for success and a life of abundance! You are WORTHY! You are created in the image of God. . . "So God created mankind in his own image, in the image of God he created them; male and female he created them" Genesis 1:27. . .now that should give you confidence that you have some great powers built in you . . . 
Stay intentional and strategic in finding out how to use your God given powers . . . you power source does not have to go weak if you stay updated in God's Word. . . what are you Graced for. . . God made you for a purpose!

Keto Brownies. . . soft and chewy!


I am excited to have a recipe for Keto Brownies that I can take to work with me and to the ball park. I am an educator that packs a lunch each weekday. On the weekends, I seem to be packing a lunch or snacks to stay Keto strong at the ballparks. My sons play college ball and travel ball, so I am away from my house many weekends. I would be a big ol' unhealthy blob if I ate from a concession stand every time I was at a ballpark. 
So here is the recipe that has made the approved taste test list from my husband, and my youngest son that still lives at home. The brownies are not as sweet as a normal brownie, but I have not had "real" brownies in so long and do not eat sugary snacks. . . so these satisfied the sweet tooth for me. I hope you enjoy them too. A quick Keto snack to take anywhere!

Keto Brownies Ingredients:
  • 1/2 cup butter melted
  • 2/3 cup Confectioner's Erythritol
  • 3 large eggs
  • ½ teaspoon vanilla extract
  • ½ cup super fine almond flour
  • 1/3 cup melted Lily's Dark Chocolate Baking Chips
  • 1 tbsp Pasture Raised Cattle unflavored gelatin
  • ½ teaspoon baking powder
  • ¼ teaspoon Pink Himalayan Salt
  • 1/4 cup water
  • 1/3 cup Lily's Dark Chocolate Baking Chips . . . optional 

 Instructions
  1. Preheat the oven to 350F and grease an 8x8 inch baking pan. 
  2. Melt butter and Lily's Dark Chocolate Baking Chips
  3. In a large bowl, whisk together the melted, melted Lily's Dark Chocolate Baking Chips, sweetener, eggs, and vanilla extract. . . set aside
  4. In another bowl, mix together the almond flour, gelatin, baking powder, and salt and whisk until well combined. 
  5. Mix the wet and dry ingredients together. 
  6. Stir in the water to thin the batter. Stir in the optional chocolate chips, if using. 
  7. Spread the batter in the prepared baking pan. 
  8. Bake 15 to 20 minutes
  9. Remove and let cool COMPLETELY in the pan. I also think the brownies taste better after they have sat for a day. . .the flavors seem to settle together after time sitting. 

Yields 16 brownies

Fats:9.5
Protein:3.1
